Description

Ingredients

For the Oreo Crust:

1/3 cup coconut oil, melted

1 3/4 cups almond flour

1/4 cup cocoa powder

1/3 cup powdered sweetener

For the Cheesecake Filling:

16 ounces cream cheese, softened

12 keto Oreo cookies, chopped

1 1/2 cups heavy cream

1 cup powdered sweetener

1 teaspoon Simply Organic Pure Madagascar Vanilla Extract


Instructions

1. Line the bottom of a 9-inch springform pan with parchment paper.

2. Add almond flour, cocoa powder, powdered sweetener, and melted coconut oil to a food processor.

3. Process until the mixture becomes crumbly and holds together when pressed.

4. Transfer the mixture to the pan and press it evenly into the bottom to form a crust.

5. Refrigerate or freeze the crust while preparing the filling.

6. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

7. Add powdered sweetener and vanilla extract, then mix until fully combined.

8. In a separate bowl, whip the cold heavy cream until stiff peaks form.

9. Gently fold the whipped cream into the cream cheese mixture using a spatula.

10. Stir in the chopped keto Oreo cookies until evenly distributed.

11. Pour the filling over the chilled crust and spread it evenly.

12. Top with extra chopped cookies if desired.

13. Refrigerate for at least 4 to 5 hours, or overnight, until firm and set.
