Description

Creamy, rich, and naturally sweetened, these No-Bake Coconut Chocolate Bars (Sugar Free) combine shredded coconut, maple syrup, and coconut oil with a smooth chocolate coating. A quick, wholesome dessert ready in minutes without any baking required.


Ingredients

4 cups unsweetened shredded coconut

1/2 cup coconut oil, melted

3/4 cup maple syrup

1 cup sugar-free chocolate (such as Lily’s or ChocZero)


Instructions

1. Line an 8 x 8-inch pan with parchment paper and set aside.

2. Add shredded coconut, melted coconut oil, and maple syrup to a food processor and blend until evenly mixed.

3. Transfer the mixture to the lined pan and press down firmly using a spatula.

4. Refrigerate for at least one hour until the mixture is firm.

5. Once firm, slice into bars using a sharp knife.

6. In a microwave-safe bowl or on the stovetop, melt the sugar-free chocolate until smooth.

7. Dip each coconut bar into the melted chocolate until completely coated.

8. Place bars on a parchment-lined plate and refrigerate again until the chocolate hardens.

9. Serve chilled for the best texture and flavor.

Notes

To Store: Keep bars in an airtight container in the refrigerator for up to 10 days.

To Freeze: Wrap bars individually in plastic wrap, place in a freezer-safe container, and freeze for up to 6 months.

Avoid keeping them at room temperature for more than one day, as the chocolate may begin to melt.

For best results, serve cold directly from the fridge.
