Description

A refreshing and healthy Mixed Fruits with Honey Lime salad made with bananas, strawberries, blueberries, and a light honey lime dressing. This easy fruit salad is naturally sweet, vibrant, and perfect as a snack, side dish, or light dessert.


Ingredients

2 large bananas, sliced into rounds

1 lb fresh strawberries, hulled and sliced

1/2 lb fresh blueberries, rinsed and drained

2 tbsp honey

2 tbsp fresh lime juice

1/3 cup pine nuts, lightly toasted (optional)

Optional: 1 tbsp fresh mint leaves, finely chopped


Instructions

• Wash all fruits thoroughly and pat dry

• Slice strawberries into halves or quarters and slice bananas into even rounds

• Add bananas, strawberries, and blueberries into a large mixing bowl

• In a small bowl, mix honey with fresh lime juice until smooth

• Drizzle the honey lime dressing evenly over the fruits

• Gently toss the fruits to coat without crushing them

• Lightly toast pine nuts in a dry pan for 2 to 3 minutes until golden, then let cool

• Sprinkle pine nuts over the fruit mixture

• Toss gently again and let sit for a few minutes before serving

• Serve immediately or chill for a refreshing taste

Notes

Use ripe but firm fruits for the best texture

Fresh lime juice gives better flavor than bottled juice

Add bananas just before serving to prevent browning

To slow browning, coat bananas well with lime juice

Pine nuts can be replaced with sunflower seeds for a nut-free option

Adjust honey depending on fruit sweetness
