Description

Mint Chocolate Overnight Oats Thin Mint Cookie style made with gluten free oats creamy cocoa mint flavor crisp chocolate shell and a crushed cookie topping for a refreshing and dessert inspired breakfast.


Ingredients

Half cup certified gluten free quick oats

One teaspoon chia seeds

One tablespoon cocoa powder

Half scoop chocolate mint cookie protein powder

Half cup unsweetened almond milk

Five drops alcohol free peppermint flavor

Two tablespoons dark chocolate chips

Half teaspoon coconut oil

One Oreo cookie crushed


Instructions

1. Add all oat ingredients to a bowl or jar and stir until fully combined.

2. Refrigerate for at least four hours or overnight.

3. Melt chocolate chips and coconut oil in the microwave in short intervals stirring until smooth.

4. Pour melted chocolate over the chilled oats and spread evenly.

5. Top with crushed cookie.

6. Freeze for ten minutes to allow the chocolate shell to harden.

7. Crack the shell and enjoy.

Notes

Adjust mint strength by starting with a small amount of alcohol free peppermint flavor.
