Description

Mediterranean Baked Cod with Herbs is a light and flavorful seafood dish made with tender cod fillets baked in olive oil, fresh lemon juice, tomatoes, olives, garlic, and oregano. The fish bakes gently until flaky and moist while the vegetables release a fragrant, savory sauce. Ingredients

Fresh cod fillets about one and a half pounds cut into four portions

Extra virgin olive oil plus extra for drizzling

Fresh lemon juice from half a lemon

Sea salt to taste

Ground black pepper to taste

Cherry tomatoes halved

Kalamata olives halved or your favorite olive variety

One small shallot peeled and thinly sliced

Garlic cloves smashed peeled and thinly sliced

Fresh oregano finely chopped or dried oregano

Fresh lemon sliced into rounds


Instructions

1. Preheat the oven to four hundred degrees Fahrenheit and lightly grease a baking dish with olive oil

2. Pat the cod fillets dry and season both sides evenly with sea salt and black pepper then arrange them in the baking dish

3. In a small bowl whisk together olive oil fresh lemon juice sea salt black pepper and oregano until well combined

4. Place cherry tomatoes olives shallot and garlic in a medium bowl and pour the olive oil mixture over them then gently toss to coat

5. Spoon the tomato and olive mixture over and around the cod fillets spreading it evenly

6. Drizzle a little extra olive oil over the fish and arrange lemon slices on top

7. Bake until the cod is opaque flakes easily with a fork and reaches an internal temperature of one hundred forty five degrees Fahrenheit

8. Remove from the oven let rest briefly then spoon the warm tomato juices over the fish before serving

Notes

Choose fresh firm cod fillets for the best texture and flavor

If using frozen cod thaw completely and pat dry to avoid excess moisture

Do not overcrowd the baking dish as this can cause the fish to steam instead of bake

Cooking time may vary depending on thickness so check early to avoid overcooking

The tomato and olive juices form a natural sauce so be sure to spoon it over the fish when serving
