Description
Cool creamy dip made with Greek yogurt, grated cucumber, garlic, mint, and olive oil for a refreshing snack or side.
Ingredients
1 and 1/2 cups plain 2 percent Greek yogurt such as Chobani Plain Greek Yogurt or Wallaby Organic Greek Yogurt
1 medium English or hothouse cucumber seeded grated and squeezed dry
2 small garlic cloves minced
2 tablespoons extra virgin olive oil
Scant 3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons finely chopped fresh mint

2. Place the Greek yogurt in a medium bowl.
3. Grate the cucumber and squeeze out the liquid until very dry.
4. Add the grated cucumber to the yogurt.
5. Stir in garlic olive oil salt and black pepper.
6. Mix until the dip becomes creamy and well combined.
7. Taste and adjust seasoning or add a pinch of sugar if you prefer softer flavor balance.
8. Cover and refrigerate for at least ten minutes.
9. Before serving drizzle a little olive oil on top and sprinkle fresh mint.

Notes
For a thicker texture drain the yogurt briefly before mixing.
Fresh mint brings a cool flavor that pairs well with cucumber.
If the dip releases liquid after chilling stir gently before serving.
The dip thickens and becomes more flavorful as it rests in the refrigerator.
