The fish bakes gently alongside baby gold potatoes and zucchini, creating a complete meal in one dish. This recipe delivers bright citrus notes, a flaky texture, and a clean herb finish that feels both comforting and fresh. It is easy to prepare, nutritious, and perfect for busy weeknights or relaxed family dinners.
Ingredients
Four fresh cod fillets, patted dry
Baby gold potatoes, cut into quarters
One medium zucchini, sliced into rounds
Extra virgin olive oil
Freshly squeezed lemon juice
One fresh lemon, thinly sliced
Fresh garlic, finely minced
Salt
Black pepper
Fresh dill, finely chopped
Instructions
1. Preheat the oven to four hundred degrees Fahrenheit and lightly coat a baking dish with cooking spray
2. In a mixing bowl, stir together olive oil, lemon juice, minced garlic, salt, black pepper, and chopped dill until well combined
3. Arrange the quartered potatoes evenly in the baking dish and drizzle with half of the lemon dill mixture
4. Microwave the potatoes briefly until they begin to soften, then carefully remove the dish
5. Place the cod fillets and sliced zucchini into the baking dish with the potatoes
6. Spoon the remaining lemon dill mixture evenly over the fish and vegetables
7. Arrange lemon slices on top to add moisture and aroma
8. Bake until the cod is opaque, flakes easily with a fork, and the vegetables are tender
9. Remove from the oven, garnish with fresh dill, and serve warm
Notes
Fresh cod provides the best texture and flavor, but fully thawed frozen cod works well when excess moisture is removed
Par cooking the potatoes ensures they become tender without overcooking the fish
Fresh lemon juice and dill are highly recommended for the brightest flavor
Avoid overcrowding the baking dish to allow proper roasting instead of steaming
Leftovers should be cooled completely before storing in an airtight container
