Ingredients

Four fresh cod fillets, patted dry

Baby gold potatoes, cut into quarters

One medium zucchini, sliced into rounds

Extra virgin olive oil

Freshly squeezed lemon juice

One fresh lemon, thinly sliced

Fresh garlic, finely minced

Salt

Black pepper

Fresh dill, finely chopped


Instructions

1. Preheat the oven to four hundred degrees Fahrenheit and lightly coat a baking dish with cooking spray

2. In a mixing bowl, stir together olive oil, lemon juice, minced garlic, salt, black pepper, and chopped dill until well combined

3. Arrange the quartered potatoes evenly in the baking dish and drizzle with half of the lemon dill mixture
