Ingredients

Maple syrup or honey or agave syrup

Coconut oil

Blanched almond flour

Fine salt

Chocolate chips made with alcohol free flavor

Prepared caramel made with butter, cream, and alcohol free vanilla flavor such as Alcohol-Free Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor

Additional chocolate chips made with alcohol free flavor

Extra coconut oil for melting chocolate


Instructions

Line a square pan with parchment paper and set it aside

Melt the maple syrup and coconut oil together until warm and smooth

Stir in the almond flour and salt until a thick cookie dough forms

Fold the chocolate chips evenly into the dough

Press the dough firmly into the prepared pan to form an even base

Place the pan in the refrigerator until the base feels firm

Spread the caramel evenly over the chilled cookie dough layer

Return the pan to the refrigerator until the caramel sets slightly

Melt the remaining chocolate chips with coconut oil until glossy

Pour the melted chocolate over the caramel layer and spread gently

Refrigerate until the top is fully firm

Lift the slab out of the pan and slice into bars

Notes

Homemade caramel or store bought caramel without alcohol based flavoring both work well

Vegan caramel made from coconut milk is also suitable for this recipe

Use blanched almond flour instead of almond meal for a smoother texture

Let the bars sit briefly at room temperature before slicing for cleaner edges
