Description

Jerk Shrimp & Pineapple Bowls bring together juicy shrimp seasoned with warm jerk spices, sweet caramelized pineapple, and tender rice in one vibrant and satisfying bowl. This recipe delivers bold tropical flavor with a balanced mix of heat and sweetness, making it ideal for an easy homemade meal that feels fresh and exciting. The combination of grilled shrimp, glossy pineapple glaze, and aromatic herbs creates a colorful dish that is both comforting and full of character.


Ingredients

Large shrimp peeled and deveined

Mild jerk seasoning

Fresh ripe pineapple

Pineapple or apricot preserves

Apple cider vinegar

Brown sugar

Canola oil or avocado oil

Mini sweet peppers chopped

Whole Scotch bonnet pepper

Kosher salt

Fresh garlic finely chopped

Scallions sliced with white and green parts separated

Fresh thyme leaves

Steamed white rice


Instructions

1. Pat the shrimp dry and toss gently with jerk seasoning until evenly coated

2. Prepare the grill or grill pan and allow it to heat thoroughly

3. Slice the pineapple in half lengthwise and remove the flesh leaving a border then chop the pineapple into bite sized pieces

4. Stir together the preserves apple cider vinegar brown sugar and remaining jerk seasoning until smooth

5. Thread the shrimp onto skewers and grill until pink opaque and lightly charred then set aside

6. Heat oil in a large skillet and cook the sweet peppers with the whole Scotch bonnet pepper until softened

7. Add garlic scallion whites and thyme and cook until fragrant

8. Stir in chopped pineapple and the prepared glaze and simmer until slightly thickened

9. Remove shrimp from skewers and toss them into the skillet until fully coated

10. Serve the shrimp mixture over steamed rice and finish with sliced scallion greens

Notes

Fresh pineapple is recommended for the best flavor and texture

Keeping the Scotch bonnet pepper whole allows heat to infuse without overpowering the dish

Avoid overcooking shrimp to keep them tender and juicy

The glaze should be thick enough to coat the shrimp without becoming sticky

Rice can be prepared ahead to make assembly quick and easy
