Description

Honey Soy Tofu Lunch Bowls bring together golden pan fried tofu glazed in a sweet savory honey soy mixture with bright vegetables and fluffy brown rice. This quick lunch option is perfect for meal prep or a fast weekday meal with balanced textures and fresh flavors.


Ingredients

300 g firm tofu, pressed and cubed

2 tablespoons peanut oil

3 tablespoons alcohol free soy sauce alternative with tamarind

2 tablespoons honey

1 teaspoon grated fresh ginger

1 small clove garlic grated or minced

Juice of half a lime

Cooked brown rice for serving

Shredded lettuce or cabbage

Cooked shelled edamame beans

Cucumber slices

Spring onion sliced thin

Fresh sliced red chili optional

Sesame seeds for garnish

Kewpie style mayonnaise for drizzling


Instructions

Press the firm tofu between clean paper towels to remove excess moisture then cut into 1 to 2 centimeter cubes and place in a large bowl

Whisk together the soy sauce alternative with tamarind honey grated ginger grated garlic and lime juice to make the honey soy glaze then toss the tofu gently until each piece is coated

Heat the peanut oil in a large non stick frying pan over medium high heat then add the tofu making sure not to crowd the pan so pieces can brown evenly

Cook the tofu turning occasionally and spoon extra glaze over the cubes as they brown until the exterior is golden and slightly crisp and the glaze is caramelized

Prepare the base ingredients by cooking brown rice until fluffy shredding lettuce or cabbage slicing cucumber and heating the edamame if needed

Assemble bowls by placing a scoop of brown rice then adding shredded lettuce or cabbage cucumber slices edamame and the golden glazed tofu

Top the bowl with spring onion sliced red chili sesame seeds and a light drizzle of Kewpie style mayonnaise then finish with a squeeze of fresh lime

Notes

Pressing the tofu well before cooking improves crispness and texture during pan frying

Avoid overcrowding the pan to prevent steaming and to ensure even browning of the tofu cubes

Store components separately if preparing ahead keeping tofu and rice in sealed containers and raw vegetables chilled so the bowl stays crisp when assembled

Reheat tofu briefly in a hot pan to restore some of the crisp texture before combining with fresh vegetables for serving
