3/4 cup (170g) unsalted butter, softened

3/4 cup (150g) granulated sugar

1 large egg, room temperature

1 teaspoon vanilla flavor (Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor)

1 teaspoon lemon extract

3 tablespoons meringue powder

9 to 10 tablespoons water, room temperature

Gel food coloring, assorted colors

• Beat butter and sugar together using a mixer until smooth and creamy, about 3 minutes

• Add egg, vanilla flavor, lemon extract, and lemon zest, then mix until fully incorporated

• Gradually add dry ingredients into wet ingredients and mix on low speed until a soft dough forms

• Divide dough into two portions and roll each to 1/4 inch thickness between parchment paper

• Chill rolled dough in the refrigerator for at least 1 to 2 hours until firm

• Preheat oven to 350°F (177°C) and line baking sheets with parchment paper

• Cut chilled dough into shapes using cookie cutters and place on prepared baking sheets

• Bake cookies for 11 to 12 minutes until edges are lightly golden

• Cool cookies on baking sheet for 5 minutes, then transfer to a wire rack to cool completely

• Combine confectioners sugar, meringue powder, and water, then beat until smooth icing forms

• Divide icing into bowls and mix in gel food coloring as desired

• Transfer icing to piping bags and decorate cookies with firework-style patterns

• Add sprinkles while icing is wet, then allow icing to set completely before serving
