Description

Healthy Chocolate Weetbix Slice is a no bake snack made with whole grain cereal, nuts, dates, cocoa, and coconut oil. It has a rich chocolate flavor with a soft chewy base and a smooth topping. This slice is easy to prepare, naturally sweetened, and works well as a balanced snack, lunchbox treat, or post workout bite.


Ingredients

Plain whole wheat Weetbix style cereal, crushed finely

Raw walnuts

Unsweetened desiccated coconut

Medjool dates, pitted and soft

Dried apricots

Chocolate protein powder with no alcohol based flavoring

Natural peanut butter made only from peanuts

Unsweetened cocoa powder

Ground cinnamon

Salt

Tap water

Coconut oil

Pure maple syrup


Instructions

1. Prepare a loaf tin by lining it with baking paper and set it aside

2. Add the walnuts and Weetbix cereal to a food processor and pulse until a coarse crumb forms then transfer to a large mixing bowl and stir in the desiccated coconut

3. Place the Medjool dates and dried apricots into the food processor with the tap water and blend until a thick sticky paste forms then add this paste to the bowl with the cereal mixture

4. Soften the peanut butter if needed and add it to the bowl along with cocoa powder cinnamon salt chocolate protein powder and the remaining water then mix until the mixture becomes sticky and well combined

5. Transfer the mixture into the prepared tin and press it down firmly and evenly into all corners using damp hands or a spatula

6. Melt the coconut oil gently until just liquid then stir in the cocoa powder and maple syrup until smooth

7. Pour the chocolate topping over the pressed base and spread evenly across the surface

8. Cover the tin and refrigerate until fully set then remove and slice into even pieces using a sharp knife

Notes

Use plain unflavored Weetbix style cereal for best results and gluten free versions work well if needed

Soft Medjool dates give the best texture and natural caramel flavor

Good quality dried apricots improve taste and can be swapped with dried cranberries or raisins if preferred

Choose natural peanut butter with simple ingredients and almond or cashew butter can be used as alternatives

If protein powder is omitted do not add the extra water to keep the mixture from becoming too soft

Store slices chilled for clean cuts and best texture
