Description

Healthy Chocolate Weetbix Bliss Balls are a no bake snack made with Weetbix, Medjool dates, cocoa powder, and peanut butter. These bliss balls have a rich chocolate flavor, a soft fudgy texture, and natural sweetness from dates. They are quick to prepare, require minimal equipment, and are ideal for meal prep, snacks, or a better for you dessert option.


Ingredients

Weetbix cereal, crushed for the base

Medjool dates, pitted and softened if needed

Water to help form a smooth date paste

Natural peanut butter with no added sugar

Unsweetened cocoa powder for chocolate flavor

Shredded coconut for texture and binding

Extra Weetbix for coating

Ground cinnamon for the outer dust


Instructions

Check the dates and remove any pits. If the dates are firm, soften them in the microwave briefly or soak in hot water, then squeeze out excess moisture

Add the dates and water to a food processor and blend until a smooth, thick paste forms

Add peanut butter, whole Weetbix, cocoa powder, and shredded coconut to the date paste and blend until fully combined and sticky

Adjust the mixture if needed by adding more coconut if too wet or a little water if too dry

Refrigerate the mixture to make it easier to roll

Clean the food processor and blend extra Weetbix, cocoa powder, and cinnamon until fine crumbs form

Roll the chilled mixture into evenly sized balls using your hands

Roll each ball in the chocolate Weetbix dust until coated

Place the bliss balls in an airtight container and refrigerate until firm before serving

Notes

Medjool dates are recommended because they are softer and sweeter than regular dates

Natural peanut butter works best, but almond butter or cashew butter can also be used

If the mixture feels sticky while rolling, lightly dampen your hands with water

These bliss balls can be stored in the refrigerator for up to one week

They can also be frozen for longer storage and thawed before eating
