Description

Healthy Blueberry Yogurt Ice Pops Just 3 Ingredient is a refreshing, creamy frozen treat made with real blueberries, smooth vanilla Greek yogurt, and natural sweetener. These easy homemade popsicles are packed with antioxidants, protein, and natural flavor, making them a perfect healthy snack or light dessert for warm days.


Ingredients

2 cups (280 grams) fresh or frozen blueberries

2 tablespoons (30 ml) honey or agave syrup

2 cups (480 grams) vanilla Greek yogurt such as Chobani Vanilla Greek Yogurt or FAGE Total Vanilla or Stonyfield Organic Vanilla Yogurt

Optional extra sweetener to taste


Instructions

• Blend the blueberries in a blender or food processor on high speed until smooth and slightly thick like a puree

• Pour the blended blueberries into a large mixing bowl and stir in the honey or agave syrup until well combined

• Add the vanilla Greek yogurt and gently fold the mixture together to create a creamy texture while keeping a light swirl effect if desired

• Taste the mixture and adjust sweetness by adding a little more honey or agave if needed

• Pour the mixture evenly into popsicle molds leaving a small space at the top

• Insert popsicle sticks if your mold allows or freeze for about 2 hours before inserting wooden sticks

• Freeze the popsicles for 4 to 6 hours or until completely solid

• Run molds under warm water for a few seconds to easily release the popsicles and serve immediately

Notes

Use ripe blueberries for the best natural sweetness and color

Frozen blueberries work well but allow them to soften slightly before blending

For a smoother texture strain the blueberry puree before mixing with yogurt

Do not overmix if you want a marbled swirl appearance

Store popsicles in an airtight container in the freezer for up to 2 weeks

You can substitute blueberries with strawberries raspberries or peaches for variety
