Ingredients
6 heaping tablespoons creamy peanut butter
2 pounds ground beef sirloin
Kosher salt
Freshly ground pepper
3 tablespoons unsalted butter
6 soft hamburger buns such as Canyon Bakehouse Burger Buns, Bfree Soft White Rolls, or Udi’s Hamburger Buns
Fresh lettuce
Sliced tomatoes
Mayonnaise
Instructions
1. Warm the peanut butter in a saucepan over medium low heat stirring until smooth and loose then keep warm over very low heat
2. Divide the ground beef into loose balls and gently flatten them into thin patties without compacting them
3. Heat a cast iron skillet until very hot then place the patties inside and press them flat with a spatula
4. Season with salt and pepper and cook flipping once until well done and crisp at the edges
5. Melt the butter in a second skillet over high heat then place the buns cut side down and lightly press until toasted and golden
6. Place each cooked patty on the bottom bun and spread with a heaping spoon of warm peanut butter
7. Add fresh lettuce and sliced tomatoes
8. Spread mayonnaise on the inside of each top bun and place them over the patties to finish the burgers
Notes
Use smooth creamy peanut butter for the best melt and texture
Avoid overworking the beef to keep the patties tender and juicy
Warm the peanut butter only gently to prevent separation or graininess
Toast the buns just long enough to add crispness while keeping the inside soft
Add lettuce and tomatoes at the end so they stay crisp and fresh
