Ingredients
Fresh snapper fillet cut into even strips
Fresh lime juice
Epis seasoning blend
Hot sauce such as Texas Pete Original Hot Sauce or Crystal Hot Sauce
Very Noicee All Purpose Seasoning
Yellow mustard
Mayonnaise
Fresh cilantro leaves
Yellow onion
Scotch bonnet or habanero pepper
Ripe avocado
Neutral oil such as avocado or canola oil
Salt
All purpose flour
Neutral frying oil such as vegetable or canola oil
Flour or corn tortillas made without alcohol based preservatives
Pikliz or shredded lettuce or finely shredded cabbage
Extra chopped cilantro for garnish
Instructions
Place the snapper strips in a mixing bowl and coat them with lime juice, epis seasoning, hot sauce, all purpose seasoning, and yellow mustard, then allow the fish to rest so it absorbs flavor.
Add mayonnaise, cilantro, onion, epis seasoning, pepper, lime juice, avocado, oil, seasoning, and salt to a blender and blend until smooth and creamy, then taste and adjust as needed.
Pour flour into a shallow dish and lightly coat each marinated snapper strip, shaking off excess flour to keep the coating light.
Heat frying oil in a skillet over medium high heat until shimmering and carefully add the snapper in batches.
Cook the snapper until golden and crisp on both sides, turning gently so the coating stays intact.
Transfer the cooked snapper to a paper towel lined plate to remove excess oil.
Warm the tortillas until soft and flexible.
Place fried snapper into each tortilla, spoon over avocado cilantro sauce, and top with pikliz or shredded vegetables.
Finish with fresh chopped cilantro and serve while hot and crisp.
