Ingredients

For the cookies:

• 1 cup (226g) unsalted butter, very soft

• 1/2 cup (60g) powdered sugar

• 1 teaspoon vanilla flavor (Watkins Clear Vanilla Flavor or Simply Organic Vanilla Flavor)

• 1 3/4 cups (220g) all-purpose flour

• 1/4 cup (30g) cornstarch

For the lemon glaze:

• 2 cups (240g) powdered sugar

• 2 tablespoons (30ml) half and half or whole milk, plus more if needed

• 2 tablespoons (30ml) fresh lemon juice

• Red, white, and blue sprinkles (optional)


Instructions

• Line two baking sheets with parchment paper and set aside

• Place softened butter in a mixing bowl and stir until smooth and creamy

• Add powdered sugar and vanilla flavor then mix until light and fluffy

• Sprinkle flour and cornstarch evenly over the mixture and stir until a soft dough forms

• Transfer dough to a lightly floured surface and knead gently until smooth

• Shape into a ball then flatten into a disk for easy rolling

• Roll dough to about 3/8 inch thickness on a floured surface

• Cut into desired shapes and place on prepared baking sheets

• Re-roll scraps and repeat until all dough is used

• Chill the cut cookies in the refrigerator for at least one hour

• Preheat oven to 350°F (175°C)

• Bake cookies for 12 to 16 minutes until edges are lightly golden

• Rotate pans halfway through baking for even color

• Allow cookies to cool completely before glazing

• In a bowl mix powdered sugar, milk, and lemon juice until smooth and pourable

• Divide glaze and add small amounts of red and blue food coloring then swirl gently

• Dip each cookie into glaze and allow excess to drip off

• Place on a wire rack and add sprinkles while glaze is still wet

• Let cookies set for at least two hours until glaze is fully firm

Notes

Use very soft butter for best texture and easy mixing
