Ingredients

Cod fillets, skinless and evenly cut

Alcohol free soy sauce with a clean savory flavor

Honey for natural sweetness and glaze shine

Rice vinegar for mild acidity and balance

Fresh ginger, finely grated

Garlic cloves, finely minced

Sesame oil for nutty depth

Green onions, thinly sliced for garnish

Sesame seeds for garnish and texture

Fresh cilantro, chopped

Fresh lime wedges for serving


Instructions

Preheat the oven to four hundred degrees Fahrenheit and line a baking sheet with parchment paper

Pat the cod fillets dry and arrange them on the prepared baking sheet with space between each piece

In a small bowl whisk together soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until smooth and glossy

Brush the ginger soy glaze generously over each cod fillet so the surface is evenly coated

Place the baking sheet on the center rack of the oven and bake until the cod turns opaque and flakes easily with a fork

Halfway through cooking spoon some of the glaze from the pan back over the fillets to enhance flavor and shine

Remove the cod from the oven and let it rest briefly before serving

Transfer to plates and garnish with green onions, sesame seeds, cilantro, and lime wedges

Notes

Fresh cod works best for this recipe, but fully thawed frozen cod can also be used if patted dry

Avoid overcooking as cod is delicate and can dry out quickly

Adjust sweetness or tang by adding a little more honey or rice vinegar to the glaze

For extra color and caramelization the cod can be broiled briefly at the end while watching closely
