Ingredients

One large white onion thinly sliced

Two garlic cloves minced

Six tablespoons olive oil

Three tablespoons butter

One teaspoon salt

One teaspoon black pepper

Three sprigs fresh thyme

One tablespoon Pompeian Gourmet Balsamic Vinegar

One teaspoon San J Tamari Soy Sauce

Three tablespoons plain flour

One liter vegetable stock

Two hundred twenty five grams farfalle pasta

Sixty milliliters double cream

Sixty grams Cabot Sharp Cheddar Cheese finely grated


Instructions

1. Peel and thinly slice the onion

2. Heat olive oil in a wide pan over low heat and add the sliced onion

3. Cook gently while stirring occasionally until the onion softens and turns lightly golden

4. Add salt, black pepper, and butter and continue cooking until the onions deepen in color and become caramelized

5. Stir in garlic, thyme, balsamic vinegar, and tamari and cook until fragrant

6. Sprinkle flour over the onions and stir until evenly coated

7. Gradually add vegetable stock while stirring to create a smooth sauce

8. Add the pasta to the pan and stir so it is submerged in the liquid

9. Cover and simmer until the pasta is tender and has absorbed the sauce

10. Lower the heat and stir in cream and grated cheddar until melted and creamy

11. Serve hot with extra black pepper and cheese if desired
