Description
Creamy chilled eggnog overnight oats topped with a crisp white chocolate shell for a sweet and satisfying breakfast.
Ingredients
1/2 cup certified gluten free quick oats
1 tsp chia seeds
1/4 tsp ground cinnamon
1/4 cup dairy free eggnog
1/4 cup unsweetened almond milk
1/2 scoop vanilla protein powder made with alcohol free vanilla flavor such as Alcohol Free Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor or Orgain Vanilla Plant Protein or Vega Protein and Greens
2 to 3 tbsp white chocolate chips
1 tsp coconut oil
Optional cinnamon nutmeg sprinkles
Instructions
1. Add all oat ingredients to a bowl or jar and stir until smooth.
2. Refrigerate for at least 4 hours or overnight.
3. Microwave white chocolate chips and coconut oil until melted.
4. Pour melted chocolate over the chilled oats.
5. Sprinkle cinnamon nutmeg and sprinkles.
6. Place in freezer for 10 minutes to harden the chocolate shell.
7. Crack and enjoy.
Notes
Adjust almond milk for a thicker or thinner consistency.
Protein powder sweetness varies by brand.
Skip the chocolate shell for a lighter version.
If too thick after chilling add a splash of almond milk before serving.
