Description
Soft, spiced Eggnog Chai Snowmen Cookies made with creamy butter, smooth cream cheese, and aromatic chai spices, topped with rich eggnog frosting and fun chocolate decorations. Perfectly tender and full of cozy flavor.
Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 cup (2 sticks) salted butter, at room temperature
4 ounces cream cheese (Philadelphia Cream Cheese or Organic Valley Cream Cheese)
1 cup granulated sugar
1 large egg
2 teaspoons Simply Organic Pure Madagascar Vanilla Extract
Mini chocolate cups, mini chocolate chips, sprinkles, and melted chocolate for decorating
Chai Spice Sugar:
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon all-spice
1/2 teaspoon ground cardamom
Eggnog Frosting:
1/2 cup (1 stick) salted butter
2 1/4 cups powdered sugar
2–4 tablespoons fresh eggnog
1/4 teaspoon ground nutmeg
Instructions
1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
2. In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
3. In a large bowl, beat together butter, cream cheese, and granulated sugar until light and fluffy, about 2 minutes.
4. Add the egg and vanilla extract, and beat until smooth and creamy.
5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. If dough feels sticky, chill for 10–15 minutes.
6. In a small bowl, combine sugar, cinnamon, ginger, all-spice, and cardamom to make chai sugar.
7. Roll the dough into 16 large balls (1 tablespoon each) and 16 small balls (2 teaspoons each). Coat each in chai sugar.
8. On the baking sheets, pair one large and one small ball together to form snowmen, lightly pressing at the joint.
9. Bake 8–10 minutes until edges are lightly golden. Cool completely before decorating.
10. For the frosting, beat butter and powdered sugar until creamy. Gradually add eggnog and nutmeg, beating until fluffy.
11. Frost cooled cookies. Decorate with mini chocolate cups for hats, and add sprinkles or melted chocolate for faces and buttons.
Notes
Store cookies in an airtight container at room temperature for up to 4 days.
Refrigerate dough up to 2 days in advance, or freeze up to 1 month before baking.
Yields about 24 cookies with approximately 328 calories each.
