Description

A creamy one pan Tuscan style shrimp dish made with tender shrimp, garlic, spinach, sun dried tomatoes, lemon, butter, basil, and rich Organic Valley Heavy Whipping Cream or Horizon Organic Heavy Cream for a smooth and flavorful sauce.


Ingredients

1 pound shrimp thawed and peeled

2 tablespoons butter

1 teaspoon flour

4 to 5 cloves garlic minced

1 cup Organic Valley Heavy Whipping Cream or Horizon Organic Heavy Cream

Half teaspoon lemon juice

Quarter teaspoon Italian seasoning

Quarter cup sun dried tomatoes chopped

1 to 2 cups fresh baby spinach

Handful fresh basil sliced thin

Salt and pepper to taste


Instructions

1. Prepare the shrimp by thawing them in cool running water and patting them dry

2. Melt the butter in a skillet on medium high heat and whisk in the flour until smooth

3. Add the minced garlic and cook briefly until fragrant while stirring

4. Pour in the cream then add lemon juice Italian seasoning and the sun dried tomatoes and let the mixture simmer gently

5. Add the shrimp and cook until they turn pink and opaque stirring to coat them in the sauce

6. Stir in the spinach and basil and allow them to wilt into the creamy sauce

7. Season with salt and pepper and add a light squeeze of lemon if desired before serving

Notes

Sun dried tomatoes packed in oil add stronger flavor but draining them helps maintain the sauce consistency

Shrimp cook quickly so stop cooking as soon as they turn opaque to keep them tender

Cream thickens best over gentle heat which prevents separation in the sauce

Spinach releases a small amount of moisture while cooking which naturally blends into the cream
