Description
A creamy, fruity, and naturally sweet dessert that’s both indulgent and guilt-free. These Easy Sugar Free Banana Split Cups combine Greek yogurt, fresh berries, and a rich coconut sugar chocolate drizzle to create a healthy twist on the classic banana split.
Ingredients
2 ripe bananas, sliced lengthwise
1 cup frozen Greek yogurt or plain Greek yogurt
1 tbsp honey
1/2 tsp Simply Organic Pure Madagascar Vanilla Extract (non-alcoholic)
1/2 cup fresh blueberries
1/2 cup fresh raspberries
1/2 cup fresh blackberries
2 tbsp chopped roasted almonds
1 tbsp clean eating chocolate sauce
Clean Eating Chocolate Sauce:
1 1/2 cups coconut sugar
3/4 cup unsweetened cocoa powder
1 tbsp cornstarch
A pinch of sea salt
1 cup light coconut milk (canned)
Instructions
1. If using Greek yogurt instead of frozen Greek yogurt, mix yogurt, honey, and vanilla extract until smooth.
2. Slice the bananas in half lengthwise and place each half on opposite sides of two small serving bowls.
3. Add a few mixed berries between the banana slices, then spread the yogurt evenly on top.
4. Top with remaining fresh berries for added color and flavor.
5. Sprinkle roasted almonds over the top for crunch.
6. Drizzle with the clean eating chocolate sauce and serve immediately.
7. To make the chocolate sauce:
8. In a medium saucepan, whisk together coconut sugar, cocoa powder, cornstarch, and sea salt.
9. Gradually stir in light coconut milk over medium heat.
10. Whisk continuously until smooth and thickened, about 10 minutes.
11. Remove from heat and allow it to cool to room temperature.
12. Pour into a glass jar with a lid and refrigerate; it keeps for up to 2 months.
Notes
Use frozen Greek yogurt for a firmer, ice cream-like texture or regular Greek yogurt for a creamier consistency.
You can replace honey with pure maple syrup or monk fruit syrup for a different sweetness profile.
Add extra toppings like granola, chopped walnuts, or toasted coconut for variety.
Keep yogurt and chocolate sauce stored separately in the fridge and assemble the dessert right before serving.
Each serving provides a good source of protein and calcium while keeping sugar content low.
