Ingredients
1/2 cup butter
3/4 cup sugar
1 large egg
1 1/4 cups plus 2 tablespoons all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
Red sugar crystals sprinkles
Green sugar crystals sprinkles
Instructions
1. Preheat oven to 375°F.
2. Cream together the butter and sugar until light and fluffy.
3. Mix in the egg until fully incorporated.
4. In a separate bowl, sift together flour, cream of tartar, baking soda, and salt.
5. Gradually fold the dry ingredients into the wet mixture until just combined.
6. Chill the dough for 30 minutes.
7. Prepare two small, shallow bowls with 1/2 teaspoon cinnamon in each and 1 tablespoon red sprinkles in one, 1 tablespoon green sprinkles in the other.
8. Line a baking sheet with parchment paper.
9. Scoop dough into even balls using a cookie scoop or spoon.
10. Roll each dough ball in the cinnamon and sprinkle mixtures, coating evenly.
11. Place coated dough balls on the prepared baking sheet.
12. Bake for 8 minutes or until edges are set and centers are soft.
13. Transfer cookies to a wire rack to cool completely.
14. Serve and enjoy.

Dough can be frozen before baking for later use.
Use room temperature butter for best texture.
