Ingredients

Salted butter, plus extra for greasing the pan

Regular marshmallows made with agar agar or vegetarian gelatin

Fine salt

Crisp rice cereal

Mini white marshmallows made with agar agar or vegetarian gelatin

Rainbow sprinkles for decorating


Instructions

Grease a rectangular baking pan generously with softened butter and set it aside

Place a large pot over low heat and melt the butter slowly until fully liquid

Add the regular marshmallows and stir constantly until completely melted and smooth

Stir in the salt until evenly combined then remove the pot from heat

Add the rice cereal and gently fold until every piece is coated with marshmallow

Fold in the mini marshmallows carefully so they stay mostly whole

Transfer the mixture to the prepared pan and press gently into an even layer

Sprinkle the top with rainbow sprinkles while still warm

Let the treats cool completely at room temperature

Slice into squares and serve

Notes

Use low heat when melting marshmallows to keep the texture soft and chewy
