Ingredients
Unsalted butter, high quality for smooth flavor
Allulose or keto brown sugar substitute, finely granulated
Keto friendly chocolate chips made with cocoa butter
Raw almonds, chopped very finely
Parchment paper for lining the pan
Instructions
Line a small loaf pan or square pan with parchment paper and spread the finely chopped almonds evenly over the bottom, then set aside
Add the butter and allulose or keto brown sugar substitute to a heavy bottom saucepan and place over low heat until the butter melts completely and the sweetener dissolves, stirring regularly
Allow the mixture to gently bubble and insert a candy thermometer into the center without touching the bottom
Continue cooking while stirring occasionally until the mixture reaches the hard crack stage and turns glossy and amber in color
Remove the saucepan from the heat and stir continuously to keep the mixture smooth and well combined
Carefully pour the hot toffee over the almond layer in the prepared pan and allow it to settle for several minutes
Sprinkle the keto chocolate chips evenly over the warm toffee surface and loosely cover with foil
Let the chocolate soften, then spread it into an even layer using a rubber spatula
Refrigerate until completely firm, then lift out and break into pieces
