Ingredients
1 cup butter, softened
½ cup granulated sugar
½ cup light brown sugar
2 large eggs
2 teaspoons Simply Organic Pure Madagascar Vanilla Extract
2¾ cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
12.5 oz Tillamook Frosting Cream Cheese Spread or Simple Mills Organic Vanilla Frosting
Coating:
4 tablespoons granulated sugar
2–3 teaspoons ground cinnamon
Instructions
1. Beat butter, granulated sugar, and brown sugar together until light and fluffy.
2. Add eggs and Simply Organic Pure Madagascar Vanilla Extract, then mix until combined.
3. In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and ground cinnamon.
4. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
5. Cover and chill dough for at least 30 minutes or until firm.
6. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
7. Mix granulated sugar and cinnamon in a small bowl for coating.
8. Roll 1-inch dough balls in the cinnamon-sugar coating, then place on the prepared baking sheets.
9. Bake for about 8 minutes or until edges are lightly golden and centers are soft.
10. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
11. Stir the frosting until smooth and creamy.
12. Spread frosting on the flat side of one cookie and top with another cookie to form sandwiches.
13. Repeat with remaining cookies.
Notes
To keep cookies soft, store them in an airtight container with a slice of bread.
Cookies can be refrigerated for up to 3 days or frozen for 2 months.
Let them come to room temperature before serving for the best texture.
