Description

This dreamy creamy no bake swirl pie combines fresh strawberries and blueberries with a rich vanilla cream layer, all nestled in a flaky crust. It is smooth, fruity, and refreshing, making it a perfect chilled dessert for any occasion.


Ingredients

1 pre made 9 inch pie crust

2 cups fresh strawberries, sliced

1/4 cup (50 grams) granulated sugar

1 tablespoon cornstarch mixed with 2 tablespoons water

2 cups blueberries fresh or frozen

1/4 cup (50 grams) granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch mixed with 2 tablespoons water

1 cup heavy whipping cream

8 oz (226 grams) cream cheese softened (Philadelphia Cream Cheese or Tillamook Cream Cheese)

1/2 cup (60 grams) powdered sugar

1 teaspoon vanilla flavor (Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor)

1/2 cup whipped cream for topping optional

1/2 cup fresh berries for garnish optional


Instructions

• Place the pie crust into a 9 inch pie dish and press evenly into the edges, then set aside

• In a saucepan combine strawberries, sugar, and cornstarch mixture, cook over medium heat until thickened and soft, then cool completely

• In another saucepan combine blueberries, sugar, lemon juice, and cornstarch mixture, cook until thickened and glossy, then let cool fully

• In a bowl whip heavy cream until stiff peaks form

• In another bowl mix cream cheese, powdered sugar, and vanilla flavor until smooth

• Gently fold whipped cream into the cream cheese mixture until light and fluffy

• Spread the cream layer evenly into the prepared crust

• Add spoonfuls of strawberry and blueberry mixtures over the cream layer

• Use a knife or skewer to gently swirl the fillings into a marbled pattern

• Cover and refrigerate for at least 2 hours or until fully set

• Slice and serve chilled with whipped cream and fresh berries if desired

Notes

Allow fruit fillings to cool completely before assembling to prevent melting the cream layer

Do not over swirl the fruit to keep a clean marbled appearance

Chill the pie longer for a firmer texture and cleaner slices

Fresh berries provide brighter flavor but frozen berries can also be used

Store leftovers covered in the refrigerator for up to 3 days
