Ingredients
1 cup unsalted butter, softened (or Smart Balance for dairy-free)
1 1/2 cups granulated sugar
2 large eggs
2 teaspoons Simply Organic Pure Madagascar Vanilla Extract
3 cups gluten-free all-purpose flour with xanthan gum
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup granulated sugar (for coating)
2 teaspoons ground cinnamon (for coating)
Instructions
1. Preheat oven to 350°F.
2. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
3. Scrape down the bowl and add the eggs (or egg replacer) and vanilla extract, mixing until smooth.
4. Add cream of tartar, baking soda, and salt, stirring until combined.
5. Gradually add gluten-free flour in two halves, mixing until dough forms.
6. In a small bowl, mix 1/4 cup sugar with 2 teaspoons ground cinnamon.
7. Scoop dough using a 1 1/2 teaspoon cookie scoop and roll each ball in the cinnamon-sugar mixture to coat evenly.
8. Place dough balls on a parchment-lined baking sheet, spaced 1–2 inches apart.
9. Flatten dough balls slightly for crisp cookies, or leave rounded for softer ones.
10. Bake for 8 minutes for soft cookies or 10–12 minutes for crisp ones (12 minutes if using egg replacer).
11. Cool cookies on the baking sheet for several minutes before transferring to a wire rack.

Notes
If cookies spread too much, chill the dough or reduce the butter slightly.
