Rich, crunchy, and sugar-free, this dark chocolate almond bark is the perfect low-carb treat. Made with clean ingredients like cocoa butter, roasted almonds, and natural sweeteners.
Ingredients
1/4 cup Swerve Brown
1 tablespoon butter
3/4 cup roasted almonds, unsalted
1/4 teaspoon sea salt
2 ounces cocoa butter
1 1/2 ounces unsweetened chocolate, chopped
1/3 cup powdered Swerve Sweetener
1/3 cup cocoa powder
1/4 teaspoon alcohol-free vanilla extract (Simply Organic Pure Madagascar Vanilla Extract)
Additional sea salt for sprinkling
Instructions
1. Line a large baking sheet with parchment paper.
2. In a medium saucepan over medium heat, combine Swerve Brown and butter. Bring to a boil, then reduce heat and simmer for about 2 minutes. Stir in roasted almonds and sea salt.
3. Spread the almonds out in a single layer on the prepared baking sheet and let cool.
4. In a heatproof bowl over a pot of simmering water, melt cocoa butter and unsweetened chocolate. Stir until smooth.
5. Add powdered sweetener and cocoa powder, stirring until fully incorporated. Remove from heat and stir in the vanilla extract.
6. Break up the almonds and reserve one quarter. Stir the rest into the chocolate mixture.
7. Spread the mixture on the same baking sheet, keeping it in a single layer. Top with reserved almonds and extra sea salt.
8. Chill for 1–2 hours until firm. Break into pieces and serve.
Notes
Store in the refrigerator for up to 3 weeks in an airtight container. For longer storage, freeze for up to 3 months.
