For the BBQ Sauce:

Mayonnaise

Granulated sugar

White onion grated

For the Burger:
Canola oil

Instructions
1. Heat oil in a saucepan and cook chopped onion until softened then add garlic and cook briefly. Stir in ketchup and water then simmer until slightly thickened.
2. Add ancho chile powder brown sugar mustard paprika vinegar Worcestershire honey molasses cayenne and chipotle. Simmer until rich then puree until smooth. Season with salt and pepper and set aside with a small portion reserved for brushing on the burgers.
3. Prepare the coleslaw by whisking mayonnaise vinegar sugar celery salt grated onion salt and pepper then mix in shredded cabbage and carrot. Let it rest to develop flavor.
4. Mix ancho chile powder paprika mustard coriander cumin oregano cayenne salt and pepper to create a seasoning blend for the patties.
5. Form ground chuck into patties and brush lightly with oil then press seasoning onto both sides.
6. Heat grill or skillet to high and oil the surface then place patties and sear until browned. Brush with reserved sauce flip and cook until medium doneness.
7. Top each patty with Tillamook Monterey Jack Cheese and cover briefly to melt.
8. Toast Franz Organic Hamburger Buns and place patties on the bottoms. Add BBQ sauce coleslaw dill pickles and optional potato chips then add the top bun.
Notes
The BBQ sauce stays fresh for up to one week when stored in an airtight container in the refrigerator.
Prepare the patties ahead of time and refrigerate for easier assembly.
