Ingredients

Large shrimp peeled deveined and tails removed

Kosher salt

Freshly ground black pepper

All purpose flour

Chili powder

Large eggs beaten until smooth

Panko breadcrumbs

Extra virgin olive oil

Chipotle chiles in adobo finely chopped

Adobo sauce from the same can

Pure honey

Fresh lime juice

Cooked white or jasmine rice

Fresh lime wedges for serving


Instructions

1. Pat the shrimp completely dry with paper towels and season evenly with salt and black pepper

2. Set up three shallow bowls one with flour chili powder salt and pepper one with beaten eggs and one with panko breadcrumbs

3. Dredge each shrimp in the seasoned flour shaking off excess then dip into the eggs and finally press into the panko until fully coated

4. Heat olive oil in a large skillet over medium high heat until shimmering

5. Cook the shrimp in a single layer working in batches until golden and crispy on both sides then transfer to a plate and keep warm

6. Lower the heat to medium and add the chopped chipotle chiles adobo sauce honey and fresh lime juice to the same skillet

7. Stir frequently and let the sauce simmer gently until slightly thickened and glossy

8. Remove the skillet from heat add the cooked shrimp back in and toss gently until well coated

9. Serve the shrimp over warm cooked rice with lime wedges on the side
