Ingredients
Butter
Oil
Mushrooms chopped small
Zucchini diced small
Orzo
Tomato paste
Broccoli chopped into small pieces
Spinach roughly chopped
Grated garlic
Garam masala
Turmeric
Salt
Vegetable broth
Whole or 2 percent milk
Instructions
Heat butter and oil in a large pot over medium heat.
Add mushrooms and zucchini with a small pinch of salt and cook until tender then remove and set aside.
Add the remaining butter and let it melt.
Stir in the orzo and garlic until fragrant then add tomato paste and cook a little longer.
Pour in broth milk broccoli salt turmeric and garam masala then bring to a boil.
Reduce heat cover and simmer while stirring occasionally until the orzo is cooked.
Add spinach mushrooms and zucchini back into the pot and mix until the spinach wilts.
Serve warm with lemon or chili flakes and grated pecorino Romano if you like.
Notes
Toast the orzo lightly for deeper flavor.
Stir often to prevent sticking because orzo absorbs liquid quickly.
Add extra broth or milk if the mixture gets too thick.
Let the dish rest a few minutes before serving for a creamier consistency.
Store in airtight containers and add a splash of broth when reheating to restore texture.
