Description

Creamy Garlic Shrimp with Spinach is a rich skillet dish made with tender shrimp, a smooth cream sauce, golden garlic, and fresh spinach. It is easy to prepare and full of comforting flavors that pair well with pasta or vegetables.


Ingredients

1 1/4 lbs extra large shrimp, peeled and deveined

1 tsp dried basil

Salt and freshly ground black pepper

2 Tbsp butter, divided

1 Tbsp minced garlic

3/4 cup low sodium chicken broth

1/2 cup Darigold Heavy Cream

2 tsp cornstarch mixed with 1 Tbsp chicken broth

3 oz baby spinach, chopped

1/2 cup shredded Tillamook Shredded Parmesan Cheese


Instructions

1. Sprinkle shrimp with dried basil, salt, and black pepper, then toss gently.

2. Melt one tablespoon of butter in a large skillet over medium high heat.

3. Add the shrimp in a single layer and cook until the bottom turns pink, then flip and cook until fully pink.

4. Transfer the shrimp to a plate to prevent overcooking.

5. Melt the remaining butter in the same skillet over medium heat.

6. Add the minced garlic and cook until lightly golden.

7. Pour in the chicken broth and scrape up any browned bits from the skillet.

8. Add the chopped spinach and cook until it begins to wilt.

9. Stir in the cream and the cornstarch mixture while cooking gently until the sauce begins to thicken.

10. Add the shredded parmesan and stir until it melts into the sauce.

11. Taste and adjust seasoning as needed.

12. Return the shrimp to the skillet and toss to coat with the creamy garlic sauce.

13. Serve over pasta, spaghetti squash, rice, or vegetables.

Notes

The shrimp cook very quickly so removing them early keeps them tender.

The sauce thickens fast once the cornstarch activates and can be thinned with a splash of broth if needed.

Spinach softens into the sauce and adds color and flavor.

Reheat leftovers gently on the stove with a little broth to maintain the creamy texture.
