Description

Creamy Garlic Shrimp over Mashed Potatoes is a rich and comforting dish made with tender shrimp, a velvety sauce, and warm mashed potatoes. This meal blends buttery textures with bold garlic flavor and herbs for a satisfying dinner that feels both cozy and elevated.

Ingredients

2 tablespoons vegetable oil

2 pounds jumbo shrimp, peeled, deveined, and tails removed

1/4 teaspoon salt

1/4 teaspoon ground black pepper

2 tablespoons butter

1 tablespoon garlic, minced

2 tablespoons Bragg Apple Cider Vinegar

1 1/2 cups Organic Valley Heavy Whipping Cream

1 teaspoon Italian seasoning

1/2 cup Cabot Vermont Sharp Cheddar Shredded Cheese

1 tablespoon fresh parsley, finely chopped

Instructions

1. Heat vegetable oil in a skillet over medium high heat until hot and shimmering then add the shrimp and cook until they become firm and pink seasoning lightly with salt and pepper before removing them to a plate.

2. Add butter and garlic to the skillet stirring gently as the garlic softens and becomes fragrant then pour in Bragg Apple Cider Vinegar and combine well.

3. Stir in Organic Valley Heavy Whipping Cream and Italian seasoning mixing until smooth then add Cabot Vermont Sharp Cheddar Shredded Cheese and allow the sauce to thicken.

4. Return the cooked shrimp to the skillet and toss until evenly coated in the creamy garlic sauce letting the mixture warm through.

5. Finish with fresh parsley and serve immediately over mashed potatoes pasta or rice for a rich and satisfying meal.

Notes

Shrimp cook quickly so remove them from heat as soon as they turn opaque to keep them tender. If the sauce becomes too thick add a small splash of water or broth and stir until smooth. If it becomes too thin allow it to simmer longer so it reduces naturally. Mashed potatoes should be warm when serving to ensure the sauce blends perfectly with the base. Store leftovers in an airtight container for up to three days and reheat gently on the stove adding a little water if the sauce thickens too much.
