Ingredients
Crust:
1 cup graham cracker crumbs
2 tablespoons granulated sugar
1/4 cup (60 g) melted butter
Brownie Layer:
1 1/4 cups (250 g) granulated sugar
6 tablespoons (85 g) melted butter
1 teaspoon Watkins Clear Vanilla Flavor or Simply Organic Vanilla Flavor
2 large eggs
1 cup (125 g) all purpose flour
2 tablespoons (15 g) additional flour
1/3 cup (30 g) cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
Cheesecake Layer:
3 packages (8 oz each) Philadelphia Cream Cheese or Tillamook Cream Cheese softened
3/4 cup (150 g) granulated sugar
1 tablespoon Watkins Clear Vanilla Flavor or Simply Organic Vanilla Flavor
3 large eggs
Topping:
1 package (7 oz or 200 g) s’mores baking pieces
3 tablespoons heavy cream
Instructions
• Preheat oven to 350°F (175°C) and grease a 9 inch springform pan then wrap the outside with foil
• Mix graham cracker crumbs sugar and melted butter until combined then press into the bottom and slightly up the sides of the pan
• Bake crust for 8 to 10 minutes then let it cool completely
• Combine sugar melted butter vanilla flavor and eggs until smooth then mix in flour cocoa powder baking powder and salt
• Spread brownie batter evenly over the crust and bake for 25 to 30 minutes until edges are set
• Beat cream cheese and sugar until smooth then mix in vanilla flavor and eggs one at a time until creamy
• Pour cheesecake mixture over warm brownie layer
• Place pan in a larger dish and add hot water halfway up the sides to create a water bath
• Bake for 45 to 50 minutes until the center is slightly set
• Cool at room temperature then remove from pan carefully
• Melt marshmallows with a little cream until smooth then spread over cheesecake
• Sprinkle remaining s’mores pieces on top and press lightly
• Melt chocolate chips with remaining cream and drizzle over the top
• Refrigerate for at least 2 hours before serving
