Description

A creamy whipped cottage cheese bowl topped with fresh fruit, chia seeds, and honey for a light and protein rich snack or breakfast.

Ingredients

8 oz cottage cheese such as Good Culture, Organic Valley, or Daisy

1 cup fresh assorted fruit such as strawberries, blueberries, raspberries, cherries, peaches, mango, or kiwi

1 to 2 teaspoons honey

Chia seeds

Flaxseed

Granola

Instructions

1. Combine cottage cheese and honey in a food processor or small blender.

2. Blend until smooth and fluffy, scraping down the sides as needed.

3. Transfer the whipped cottage cheese to a bowl.

4. Top with fresh fruit of your choice.

5. Sprinkle chia seeds, flaxseed, or granola on top.

6. Serve cold for the best taste and texture.

Notes

Low sodium cottage cheese such as Friendship Dairies can be used for a milder flavor.

Adjust honey to match the sweetness of your fruit choice.

Great fruit combinations include strawberries with blueberries, cherries with mixed berries, mango with kiwi, or peaches with strawberries.

Add chia seeds, flaxseeds, pumpkin seeds, or granola for extra nutrients and crunch.

For a yogurt like taste, blend frozen fruit directly with cottage cheese for a chilled texture.
