Description

Colorful Berry Mini Hand Pies are flaky, golden pastries filled with a sweet and slightly tangy mix of strawberries and blueberries. These bite sized treats are easy to prepare and perfect for serving warm with vanilla ice cream or enjoying as a quick snack.


Ingredients

2 cups all purpose flour

1 tablespoon granulated sugar

1 teaspoon fine salt

1 large egg lightly beaten

1/2 teaspoon white vinegar

1/4 cup ice cold water

3/4 cup cold unsalted butter (12 tablespoons) cut into cubes

1 1/2 cups chopped fresh strawberries

1 1/2 cups fresh blueberries

1/4 cup packed light brown sugar

1 pinch salt

1 pinch ground cinnamon

1 egg mixed with 1 tablespoon water for egg wash

2 tablespoons coarse sugar for topping

Vanilla ice cream made with alcohol free vanilla flavor (Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor)


Instructions

• Combine flour, sugar, and salt in a food processor and pulse until evenly mixed

• Whisk together egg, vinegar, and cold water in a small bowl until smooth

• Add cold butter cubes to the flour mixture and pulse until coarse crumbs form

• Pour in the liquid mixture gradually and pulse until dough just comes together

• Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes

• In a saucepan, cook strawberries with half of the brown sugar, salt, and cinnamon until soft and syrupy

• In another saucepan, cook blueberries with remaining sugar, salt, and cinnamon until thickened

• Allow both berry mixtures to cool completely before assembling

• Preheat oven to 375 degrees F and line a baking sheet with parchment paper

• Roll out chilled dough to about 1/4 inch thickness and cut into equal round circles

• Place half of the dough circles on the baking sheet and add a tablespoon of berry filling to each

• Brush edges lightly with water, cover with remaining dough circles, and seal with a fork

• Brush tops with egg wash, sprinkle with coarse sugar, and cut a small slit on each pie

• Bake for 20 to 25 minutes until golden brown and crisp

• Let cool slightly before serving warm with vanilla ice cream

Notes

Use very cold butter to ensure a flaky crust texture

Do not overfill the pies to prevent leaking during baking

Chill the dough if it becomes too soft while handling

Leftover berry filling can be used as a topping for pancakes or yogurt

Store baked pies in an airtight container at room temperature for up to two days or refrigerate for up to five days
