Vegetable bouillon

Basmati rice

Cod fillets

Fine salt

Fried onions

Garlic powder

Ground black pepper

Plain Greek yogurt such as Fage Total Plain Yogurt or Chobani Plain Greek Yogurt

Harissa paste


Instructions

1. Place part of the coriander, peppermint, and spinach into a saucepan with the vegetable bouillon and warm gently, then blend until smooth to create a green herb stock

2. Rinse the basmati rice under cold water until the water runs clear and drain thoroughly

3. Add the rice to the herb stock, bring it just to a boil, then turn off the heat, cover, and allow the rice to steam and absorb the liquid without lifting the lid

4. Fill a wide pan with water just below the steamer base and bring it to a gentle simmer

5. Lightly season the cod fillets with salt and arrange them in bamboo baskets or a steamer insert

6. Cover and steam the cod until opaque and flaky while remaining moist

7. Fluff the cooked rice gently with a fork and fold in the reserved herbs, spinach, and fried onions

8. Season the rice with garlic powder, salt, and pepper to taste

9. Stir the harissa into the Greek yogurt until smooth and well combined

10. Spoon the herb rice into bowls, top with steamed cod, and drizzle with the yogurt mixture before serving

Notes

Use fresh, firm cod fillets for the best texture and mild flavor

Do not stir or uncover the rice while it is resting to ensure even absorption and fluffy grains
