Ingredients
Four fresh cod fillets
One third cup finely grated Parmesan style cheese made with vegetarian rennet such as Cabot Grated Parmesan or Tillamook Shredded Parmesan Style Cheese
One half cup plain panko breadcrumbs such as Ian’s Panko Breadcrumbs, 4C Plain Panko Breadcrumbs, or Kikkoman Panko Breadcrumbs
Three cloves garlic finely minced
One teaspoon Italian seasoning
Two teaspoons fresh parsley finely chopped
Zest of one fresh lemon
Two tablespoons extra virgin olive oil
Salt to taste
Black pepper to taste
Fresh lemon juice for finishing
Instructions
1. Preheat the oven and prepare a baking sheet with parchment paper
2. Pat the cod fillets dry thoroughly and season both sides with salt and black pepper
3. Arrange the cod fillets evenly on the prepared baking sheet
4. Combine the grated cheese, panko breadcrumbs, minced garlic, parsley, lemon zest, Italian seasoning, and olive oil in a mixing bowl
5. Stir the mixture until evenly coated and slightly crumbly
6. Spoon the garlic Parmesan topping over each cod fillet and gently press it onto the surface
7. Place the baking sheet in the oven and bake until the fish is opaque and flakes easily
8. Check that the internal temperature reaches one hundred forty five degrees Fahrenheit
9. Remove from the oven and allow the cod to rest briefly
10. Finish with a squeeze of fresh lemon juice and serve immediately
