Ingredients
For the citrus salsa
One cup mixed California Giant berries such as strawberries, blueberries, and raspberries
Half an orange peeled and cut into small bite size chunks
One quarter shallot thinly sliced
Juice of half a lime with lime zest
Fresh cilantro roughly chopped
Sea salt to taste
Pinch of chili flakes
Extra virgin olive oil
For the cod
Two fresh cod fillets about three ounces each
Extra virgin olive oil

Instructions
Prepare the citrus salsa by washing and drying the berries and cutting larger pieces into small chunks
Combine the berries orange pieces shallot lime zest and lime juice in a small bowl
Season lightly with sea salt and chili flakes then drizzle with olive oil and gently mix
Fold in the chopped cilantro and set the salsa aside at room temperature
Pat the cod fillets dry with paper towels to remove excess moisture
Brush both sides of the cod with olive oil and season evenly with sea salt
Heat a grill pan or skillet over medium high heat until hot
Place the cod in the pan and cook until the underside is lightly golden and releases easily
Flip the cod gently and continue cooking until opaque and flaky
Remove the cod from the pan and allow it to rest briefly
Spoon a generous amount of fresh citrus salsa over each fillet and serve immediately
Notes
Use the freshest cod available for the best texture and flavor
The salsa can be adjusted by adding more lime for extra tang or more orange for sweetness
Keep the salsa chunky to maintain visual appeal and texture
If cilantro is not preferred flat leaf parsley can be used instead
