Description

Classic Creamy Porridge is a smooth, wholesome breakfast made with oats, milk, and a touch of salt. Topped with macerated strawberries and nuts, it’s warm, filling, and ready in just 20 minutes.

Ingredients

¾ cup old-fashioned oats

1½ cups water

1½ cups milk of your choice

¼ teaspoon salt

8 oz strawberries, quartered

2 tablespoons brown sugar

1 teaspoon cinnamon

1 teaspoon sumac

¼ teaspoon salt

Optional toppings: chopped nuts, honey, or alcohol-free vanilla flavor (Simply Organic Alcohol-Free Vanilla Flavor or Watkins Clear Vanilla Flavor)

Instructions

1. Combine oats, water, milk, and salt in a small saucepan.

2. Place over medium heat and stir every minute until the mixture begins to simmer.

3. Reduce heat to medium-low and cook for about 15 minutes, stirring occasionally, until creamy and smooth.

4. Pour into bowls and allow to cool slightly for a few minutes.

5. To prepare macerated strawberries, place quartered strawberries in a jar with brown sugar, cinnamon, sumac, and salt. Shake gently to coat.

6. Refrigerate for at least 10 minutes or up to overnight.

7. Spoon the berries and syrup over the porridge before serving.

8. Top with chopped nuts or a drizzle of honey if desired.

Notes

You can use whole milk for a richer flavor or any plant-based milk such as oat, almond, or soy milk.

If using coconut milk, use the carton version for a lighter flavor or water down the canned version.

When using a wide pan, add a bit more water as it cooks since more liquid will evaporate.

For added flavor, mix in cinnamon, nutmeg, or a drop of alcohol-free vanilla flavor.

Refrigerate leftovers for up to 4 days in an airtight container and reheat with a splash of milk or water before serving.
