Ingredients

One pound medium shrimp, peeled and deveined

Two teaspoons ground cumin

One teaspoon chili powder

Fresh juice of one lime

Two tablespoons freshly chopped cilantro, plus more for garnish

Two cloves garlic, minced

Three tablespoons extra virgin olive oil, divided

Kosher salt to taste

Freshly ground black pepper to taste

Romaine lettuce leaves for wrapping

One ripe avocado, thinly sliced

Sour cream such as Daisy Sour Cream, Tillamook Sour Cream, or Organic Valley Sour Cream


Instructions

1. Place the shrimp in a large bowl with cumin, chili powder, lime juice, chopped cilantro, garlic, and two tablespoons olive oil, then season with salt and pepper and toss until evenly coated

2. Let the shrimp rest in the refrigerator briefly so the flavors absorb

3. Heat the remaining olive oil in a skillet over medium heat until shimmering

4. Add the shrimp in a single layer and cook until pink and opaque, turning once during cooking

5. Remove the skillet from heat as soon as the shrimp are tender

6. Arrange romaine lettuce leaves on a serving plate

7. Add cooked shrimp and sliced avocado to each lettuce leaf

8. Drizzle with sour cream and garnish with additional cilantro

9. Serve immediately while warm and crisp.

Notes

Use fresh lime juice for the brightest flavor.
