Description

Soft, chewy Churro Snickerdoodles bring the warmth of cinnamon sugar and browned butter together with melty dark chocolate for a delicious Mexican-inspired dessert.


Ingredients

½ cup (113g) salted butter, browned and cooled completely

½ cup (100g) granulated sugar

¼ cup (55g) packed light brown sugar

1 large egg, room temperature

1 tablespoon (15ml) full-fat yogurt

1 teaspoon (5ml) Simply Organic Pure Madagascar Vanilla Extract

1¼ cups (180g) all-purpose flour

½ teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon salt

¼ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

3 oz (100g) dark chocolate, chopped into chunks

Cinnamon Sugar:

3 tablespoons (42g) granulated sugar

1 teaspoon ground cinnamon


Instructions

1. Place butter in a saucepan over medium heat and cook until golden brown with a nutty aroma. Transfer to a bowl and cool in the freezer for 15–20 minutes until firm but soft.

2. Beat the cooled browned butter with both sugars until smooth and creamy. Add the egg, yogurt, and vanilla extract and mix until combined.

3. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually fold into the butter mixture until well blended.

4. Stir in chopped dark chocolate pieces and cover the dough. Chill for at least 1 hour.

5. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.

6. Scoop the dough into balls, flatten slightly, then roll each in cinnamon sugar.

7. Place cookies on baking sheets spaced 2 inches apart and bake for 10–12 minutes until golden brown and soft in the center.

8. Let cookies cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For the best flavor, chill the dough for at least one hour before baking. Cookies stay soft for up to 7 days when stored in an airtight container.

You can freeze the dough balls for up to 3 months and bake directly from frozen by adding 1–2 extra minutes to the bake time.

For a slightly spicy twist, add a pinch of cayenne pepper to the cinnamon sugar mixture.

Serve slightly warm with coffee or milk for the ultimate churro-inspired experience.
