Ingredients
1¾ cups all purpose flour
½ cup unsweetened cocoa powder
2 teaspoons baking powder
¼ teaspoon baking soda
⅛ teaspoon salt
1½ cups granulated sugar
6 tablespoons unsalted butter, softened
2 large eggs

1 cup whole milk
1 teaspoon instant espresso powder optional
Instructions
• Preheat oven to 350°F or 175°C and line a muffin pan with paper liners
• Sift together flour cocoa powder baking powder baking soda and salt in a large bowl
• In another bowl beat butter and sugar until light and fluffy using an electric mixer
• Add eggs one at a time mixing well after each addition then stir in vanilla flavor
• Add dry ingredients in two batches alternating with milk and mix gently until combined
• Spoon batter into cupcake liners filling each about halfway
• Bake for 15 to 17 minutes until a toothpick inserted comes out clean
• Cool in the pan for a few minutes then transfer to a wire rack to cool completely
