Description

Soft, fudgy Chickpea Brownie Bites made with chickpeas, nut butter, cocoa, and chocolate chips. A simple treat with a rich chocolate flavor and smooth texture.


Ingredients

1 can chickpeas, 15 ounces, drained and rinsed

1 half cup nut butter such as almond or peanut

1 half cup maple syrup

1 tablespoon melted coconut oil

1 teaspoon alcohol free vanilla flavor such as Simply Organic Alcohol Free Vanilla Flavor or Watkins Clear Vanilla Flavor

1 quarter cup almond flour

1 quarter cup cocoa powder

1 quarter teaspoon baking soda

1 quarter teaspoon baking powder

1 quarter teaspoon salt

1 half cup chocolate chips plus a little extra for sprinkling on top


Instructions

1. Preheat oven to 350 degrees Fahrenheit.

2. Place chickpeas, nut butter, maple syrup, coconut oil, and alcohol free vanilla flavor in a food processor and blend until smooth.

3. Add almond flour, cocoa powder, baking soda, baking powder, and salt. Process again until creamy.

4. Remove lid and blade, then stir in chocolate chips by hand.

5. Spread batter into a greased eight by eight inch pan and sprinkle extra chocolate chips on top.

6. Bake for 21 to 23 minutes or until the top is set and the edges are firm.

7. Cool completely before slicing into brownie bites.

Notes

For thicker brownie bites, bake the batter in a loaf pan for 30 to 35 minutes.

Let the batter rest for five minutes before baking for a fudgier texture.

Chill the baked brownies for at least an hour for a denser result.

Mini chocolate chips melt more evenly throughout the bites.
