Description
A flavorful Chicken Fajita Rice Meal Prep dish made with seasoned chicken, bell peppers, tomatoes, black beans, instant brown rice, fresh lime, and Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese for a satisfying and convenient weekly meal option.
Ingredients
1 1/4 lbs boneless skinless chicken breasts cut into 1 inch pieces
Salt and ground black pepper
Olive oil
1 cup diced yellow onion
3 cups chopped bell pepper
3 cloves garlic minced
1 2/3 cups low sodium chicken broth
1 can fire roasted tomatoes
1 can black beans rinsed
Chili powder
Ground cumin
2 cups instant brown rice
Fresh lime juice
Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese
Chopped cilantro
Instructions
1. Heat olive oil in a large skillet over medium high heat and add chicken seasoned with chili powder cumin salt and pepper then cook until done and set aside wrapped to keep warm.
2. Add more olive oil to the skillet and sauté onions until softened then add bell peppers followed by garlic and cook until fragrant.
3. Pour in chicken broth fire roasted tomatoes black beans and additional chili powder and cumin then bring the mixture to an active simmer.
4. Stir in instant brown rice ensuring it is coated and submerged then cover and cook until the rice becomes tender.
5. Remove from heat and let the mixture rest before stirring in cooked chicken lime juice Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese and chopped cilantro.
6. Serve warm or portion into containers for meal prep.
Notes
For added flavor try including paprika or ground coriander in the broth mixture.
If you enjoy extra heat sauté a diced jalapeño with the bell peppers or finish with a splash of Texas Pete Original Hot Sauce Crystal Hot Sauce or Sriraja Panich Hot Sauce.
Let the cooked mixture cool before storing to maintain texture and freshness.
Avocado makes an excellent topping but should be added only at serving time.
