Ingredients
Plum tomatoes finely chopped
Fresh baby spinach coarsely chopped
Finely chopped red onion
Shredded cheese such as Cabot Shredded Romano or Tillamook Shredded Italian Blend
Minced fresh basil
Olive oil
Balsamic vinegar
Black pepper
Garlic powder
Boneless skinless chicken breast halves
Salt
Mozzarella slices such as Tillamook Whole Milk Mozzarella or Organic Valley Mozzarella Slices
Whole wheat tortillas such as Mission Whole Wheat Tortillas La Banderita Whole Wheat Soft Tortillas or Guerrero Whole Wheat Tortillas
Instructions
Mix tomatoes spinach red onion shredded cheese basil olive oil balsamic vinegar pepper and garlic powder in a bowl until combined
Season chicken with salt and pepper then place on a lightly oiled grill rack and cook over medium heat until fully cooked through
Place a slice of mozzarella on each piece of chicken and allow it to melt on the grill
Warm the tortillas on the grill until soft and pliable
Place one piece of chicken in the center of each tortilla and top with the tomato mixture then fold the bottom and sides to form a wrap
Notes
Use firm plum tomatoes to prevent excess moisture in the wrap
Let the grilled chicken rest before assembling for better texture
Warm tortillas only until flexible so they do not crack
Store the tomato mixture separately from the chicken to keep everything fresh and crisp
