Description

A comforting skillet meal made with tender potatoes, seasoned vegetables, ranch spices, melted Tillamook cheddar, and savory beef smoked sausage for a rich and satisfying dish.


Ingredients

4 medium baked potatoes diced

12 oz Midamar Beef Smoked Sausage or Hillshire Farm Beef Smoked Sausage sliced into half moons

2 tbsp olive oil

2 tbsp butter

1 small yellow onion finely diced

1 small bell pepper diced

1 to 2 cloves garlic minced

1 packet dry ranch seasoning

1/2 tsp smoked paprika optional

1/4 tsp black pepper

Salt to taste

1 1/2 cups Tillamook Shredded Cheddar Cheese divided

3 to 4 large eggs optional

Sliced green onions or parsley

Organic Valley Sour Cream or ranch drizzle

Texas Pete Original Hot Sauce


Instructions

2. Dice the baked potatoes and slice the beef smoked sausage into half moon pieces then prep the onion bell pepper and garlic.

3. Warm a skillet over medium heat and add one tablespoon of olive oil then cook the sausage until browned and remove it to a plate.

4. Add the remaining oil and butter to the skillet then sauté the onion and bell pepper until softened before stirring in the garlic briefly.

5. Add the diced potatoes and season with ranch seasoning smoked paprika and black pepper then press them down and cook flipping as needed until crisp.

6. Stir the browned sausage back into the skillet and let everything heat through while the flavors blend.

7. Reduce the heat and sprinkle one cup of Tillamook Shredded Cheddar Cheese over the top then cover until melted and add the remaining cheese if desired.

8. Fry or bake eggs separately and place them over the hash for a creamy finish.

9. Top with green onions Organic Valley Sour Cream a ranch drizzle or Texas Pete Original Hot Sauce and serve warm from the skillet.

Notes

Leftover or microwaved baked potatoes give the best texture since they crisp easily.

For baked eggs create small wells in the hash crack eggs inside and cover so they steam gently.

Tillamook Monterey Jack or Pepper Jack adds a different melt and flavor profile.

Skip the eggs if you want a simpler potato and sausage skillet.

A cast iron skillet creates the crispiest potatoes and deepest browning.
