Ingredients

Cashew butter, smooth and creamy

Coconut flour, finely sifted

Powdered monkfruit sweetener

Vanilla flavor using Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor

Ground cinnamon

Fresh carrots, peeled and finely grated

Pecan nuts, finely ground

Optional coconut flour or finely shredded coconut for coating


Instructions

1. Peel the carrots and grate them finely using the smallest side of a box grater, then set aside

2. Place the cashew butter into a large mixing bowl and add the vanilla flavor and ground cinnamon, then mix until smooth and glossy

3. Add the powdered monkfruit sweetener and stir well until fully incorporated and creamy

4. Fold in the finely grated carrots, mixing gently until evenly distributed throughout the mixture

5. Grind the pecans in a food processor until they resemble fine crumbs, then add them to the bowl and mix until combined

6. Gradually add the coconut flour and mix with a spatula, then knead gently with clean hands until a soft dough forms

7. Scoop small portions of the dough and roll them between your palms to form smooth balls

8. If desired, roll the balls lightly in coconut flour or shredded coconut for a finished coating

Notes

Cashew butter provides the creamy base that holds the balls together while allowing the natural sweetness of the carrots to shine, and almond butter or peanut butter can also be used with slightly different flavor results

Carrots should always be peeled and finely grated to ensure even distribution and a smooth texture throughout the balls

Coconut flour is highly absorbent, so it should be measured carefully to avoid drying out the mixture, and almond flour with a fine texture can be used as an alternative

Powdered monkfruit sweetener blends best for a smooth finish, but finely ground granulated sweeteners that measure like sugar can also work
